Raw food author and chef Jennifer Cornbleet shares how to prepare a decadent chocolate mousse tart using all raw ingredients and natural sweeteners. From her DVD, Raw Food Made Easy.

Jennifer Cornbleet’s raw dessert and snack recipes are designed to help you re-create your favorite dishes without the processed sugar, flour, and other ingredients that turn sweets into ‘guilty pleasures.’

In this video, Jennifer show you how to create a scrumptiously sweet raw tar crust that utilizes the natural goodness of dried fruit and nuts:

• Raw walnuts replace flour — Jennifer shows you how to process nuts (and explains why they must be dry) to create a ‘healthy’ flour that’s nutritious

• Dry coconut ‘lightens’ the dough instead of butter — And unlike butter, coconut meat is high in protein, not just ’empty’ fat calories

• The dates add sweetness and serve as a binder, instead of sugar and eggs – Jennifer offers valuable tips that will help you achieve ‘even’ processing.

Your food processor does the hard work, turning the first two ingredients into coarse crumbles that come together just like ‘regular’ crust with the addition of the dates.

Leave your rolling pin in the drawer! This easy raw food recipe for tart crust doesn’t need to be rolled out. Simply shape in by hand into large or individual tart pans. With no flour in the ‘dough’ or on a rolling surface, clean up is extra easy.

And once you’re done, you can fill the crust with the avocado-based chocolate mousse detailed in Part 2…

Part 1: Raw food author and chef Jennifer Cornbleet shares how to prepare delicious California rolls using raw nori seaweed, avocado, cucumbers and other vegetables. From her DVD, Raw Food Made Easy.

California Rolls are raw, vegetarian sushi rolls that swap out imitation crab meat for crisp, all-natural vegetables with thin slices of delicate avocado, wrapped in a thin sheet of nori seaweed.

Avocado is what gives California Rolls their name. California produces about 90 percent of the nation’s avocado crop and San Diego County is considered the Avocado Capital of the U.S., producing 60 percent of all the avocados grown in California.

Before she gets rolling with her sushi, Jennifer shows you how to create your ‘mise en place,’ a French culinary term that refers to prepping your ingredients and utensils. She covers basic knife skills in a simple step-by-step process as she slices and dices her way through:

• Cucumber
• Carrot
• Bell Pepper
• Avocado

You’ll learn a fool-proof technique for removing the seed from an avocado and discover a simple method for removing the delicate flesh without mashing it.

With her assembly line of ingredients ready to roll, Jennifer brings it all together with the help of a bamboo sushi mat in Part 2.

Description:

Raw food author and chef Jennifer Cornbleet shares how to prepare a delicious dairy-free ranch dressing using soaked cashews. From her DVD, Raw Food Made Easy.

Having a delicious, creamy salad dressing on hand makes it easier to get everyone in your household — from finicky kids to stubborn grown-ups — excited about eating their vegetables. In this video, Jennifer Cornbleet shares her raw, dairy-free version of the all-American favorite: ranch dressing.

Soaked raw cashews give this raw salad dressing its velvety texture.

Salt is a key ingredient in this simple recipe, so Jennifer explains how to select a good quality salt and reveals how the color of salt can indicate the presence of healthy minerals.

The iconic ‘ranch taste’ is achieved with tangy lemon juice and onion and garlic powders which provide a smoky, muted flavor. Commercially bottled dressings generally get their flavor profile from chemicals and artificial ingredients.

Since there is no mayonnaise base to this dressing, it’s perfect for when you want to eat raw on the go. It keeps for hours at room temperature with no concern about spoilage.

Description:

Raw food author and chef Jennifer Cornbleet shares how to prepare garden vegetable soup, especially good for lunch. From her DVD, Raw Food Made Easy.

In this video, Jennifer Cornbleet shows how to use your knife and blender to create a simple, but satisfying raw soup.

Before getting down to a specific recipe, Jennifer details the six basic components that go into every raw soup. This will allow you to mix and whatever ingredients you have in your refrigerator and ‘improvise’ your way to a delicious soup.

• Watery greens or vegetables (such as tomatoes) for easy blending

• Water to thin out the vegetables

• Citrus juice to perk up the flavor

• A salty seasoning (salt or miso)

• Pungent seasonings (herbs, spices, onion, garlic, etc.)

• Fat (such as avocado or olive oil) to make the soup creamy

Then Jennifer walks you step-by-step through an actual soup preparation featuring unpeeled zucchini, celery, spinach, fresh basil, tomato, lemon juice, salt, miso, water, garlic, and green onion.

You’ll even discover the best order to add your veggies to the blender to ensure that everything combines properly and find out why you should wait until the very end of the blending process to add avocado.

A raw, light, and healthy Garden Vegetable Soup is a perfect way to get more vegetables into your diet and a nice change of pace from a lunchtime salad.

Description:

Raw food author and chef Jennifer Cornbleet shares how to prepare fruit smoothies and green smoothies, especially good for breakfast. From her DVD, Raw Food Made Easy.

Good nutrition goes down easy when you transform fresh, raw fruits and veggies into delicious smoothies that you can take time to savor or grab-and-go when you’re in a rush.

Nutritionists say that breakfast is the most important meal of the day, and Jennifer agrees. She discusses why fruits and veggies are a good choice in the morning and how easy it is to blend interesting combinations.

She’ll show you how to create light and satisfying morning smoothies that will get your day off to a great start…including her personal favorite, a flavorful orange and berry smoothie.

• Orange
• Banana
• Frozen Blueberries
• Water

Jennifer points out that using frozen fruit is a time saver as well as a great way to make a drink frosty without having to dilute the flavor with added ice. And the banana adds loads of creaminess.

Unlike high-priced commercial fruit smoothies made with lots of sugar and dairy products and often merely ‘flavored’ with natural fruit juice, Jennifer’s raw, light and healthy berry smoothie puts the spotlight on the natural sweetness of whole, healthy fruits.

She’ll also show you how to ‘amp up’ the nutritional value of a berry smoothie with an unexpected ingredient: a handful of kale. (Don’t worry. The taste is amazing!)
