I have been known as a crank, faddist, mad man. Evidently the reputation is well deserved. For wherever I go, I draw to myself cranks, faddists and mad men. Andhra has its fair share of all these. They often find their way to Sabarmati. No wonder then that I found these specimens in abundance during my Andhra tour. But I propose to introduce to the reader only one fellow crank who by his living faith in his mission compelled my admiration and induced me to plunge into a dietetic experiment which I had left unfinished at the age of 20 when I was a student in London.

This is Sundaram Gopalrao of Rajahmundry. The ground was prepared for him by a survey superintendent whom I met at Vizagapatam and who told me he was practically living on raw food. Gopalrao has a Nature Cure establishment in Rajahmundry, to which he devotes the whole of his time. He said to me, “The hip-baths and other kindred appliances are good so far as they go. But even they are artificial. To be rid of diseases it is necessary to do away with fire in the preparation of foods. We must take everything in its vital state even as animals do.”

“Would you advise me to adopt entirely raw diet?” I asked.

“Certainly, why not? I have cured cases of chronic dyspepsia in old men and women through a balanced diet containing germinating seeds,” was Gopalrao’s reply.

“But surely there should be a transition stage,” I gently remonstrated.

“No such stage is necessary,” rejoined Gopalrao. “Uncooked food, including uncooked starch and protein are any day more digestible than cooked. Try it and you will feel all the better for it.”

“Do you take the risk? If the cremation ceremony takes place in Andhra, the people will cremate your body with mine,” I said.

“I take the risk,” said Gopalrao.

“Then send me your soaked wheat. I commence from today,” I said.

Poor Gopalrao sent the soaked wheat. Kasturbai, not knowing that it could possibly be meant for me, gave it to the volunteers who finished it.

So I had to commence the experiment the following day – 9th May. It is therefore now a month when I am writing these notes.

I am none the worse for the experiment. Though I have lost over five pounds in weight, my vitality is unimpaired. During the last eight days the weight has shown a decided tendency to increase.

Fellow faddists should know what I am doing. I take generally:

8 tolas of germinating wheat,
8 tolas of sweet almonds reduced to a paste, 8 tolas of green leaves pounded,
6 sour lemons, and 2 ounces of honey.

Wheat is replaced twice or thrice during the week by an equal quantity of germinating gram. And when gram is taken in the place of wheat, coconut milk replaces almond paste. The food is divided into two parts, the first meal is taken at 11 a.m. the second at 6-15 p.m. The only thing touched by fire is water. I take in the morning and once more during the day boiling water, lemon and honey.

Both wheat and gram germinate in 36 hours. The grain is soaked in water for twenty-four hours. The water is then strained. The grain is then left in a piece of wet Khadi overnight. You find it sprouting in the morning ready for use. Those who have sound teeth need not pound the grain at all. For coconut milk a quarter of the kernel is grated fine and you squeeze the milk through a piece of stout Khadi.

It is unnecessary to enter into further details. What I have given is enough for diet reformers to help me with their suggestions. I have lived for years on uncooked fruits and nuts but never before beyond a fortnight on uncooked cereals and pulses. Let those therefore who know anything of unfired food favour me with literature of their own experiences.

I publish the facts of this experiment because I attach the greatest importance to it. If it succeeds it enables serious men and women to make revolutionary changes in their mode of living. It frees women from a drudgery which brings no happiness but which brings disease in its train. The ethical value of uncooked food is incomparable. Economically this food has possibilities which no cooked food can have. I therefore seek the sympathetic help of all medical men and laymen who are interested in reformed dietetics.

Let no one blindly copy the experiment. I have not Gopalrao’s faith. I do not claim success for it yet. I am moving cautiously. The facts are published so as to enable me to compare notes with fellow food reformers.

How to Sharpen Mental Clarity With a Raw Food Diet

Eating raw food offers a number of unexpected improvements to your quality of life. For one thing, energy levels are increased dramatically with the raw food diet. For another, raw foodists report noticeably sharpened mental clarity starting about 1 week into the diet. In this article, we’ll cover three ways that raw food can improve your cognitive function.

1. Removing toxins from your diet

When you cook your food, you introduce toxins into your diet. These toxins take a number of different chemical forms, the most common of which are called advanced glycation end products (AGEs). When food is browned on a grill or in a toaster, a chemical reaction takes place binding sugars and proteins together to create these toxins. When these materials get stuck in your system, they produce an inflammatory response. Consumption of these materials has been associated with aging of the skin, brain, and internal organs, along with associated diseases like diabetes and Alzheimer’s. By eating raw food, you eliminate intake of these items from your diet. Mental clarity is increased because your body has lower levels of systemic inflammation. You can think of it as the difference between having a headache and taking an aspirin to make it go away so you can concentrate. Energy levels are also increased because of the diminished load on your liver.

2. Removing unwanted hormones

This point applies to vegans as well. When you eat meat, you are typically consuming food from female or castrated male animals. When you eat dairy, you are eating something that came out of a pregnant or lactating cow. Even if you are eating fully organic, hormone-free meats and dairy, at baseline you are still tilting your balance toward higher levels of estrogen consumption. Vegans and raw foodists often report increased feelings of relaxation, peace, and ease when these influences are removed from the diet. Impulsive and irrational behavior becomes less common. Menstrual cycles also take on much greater regularity.

3. Increasing depth of sleep

When you eat meat for dinner and go to bed a couple of hours later, your body is still processing a huge load of animal protein. For instance, when you eat a big steak dinner and then feel like falling asleep, your body is mobilizing blood flow to the stomach in order to manage the digestive workload. When you eat raw food, your body is managing materials that are much more easily digested. You are also getting a much higher intake of fiber, which speeds digestion along. As a result, sleep cycles can deepen substantially. When I eat raw food, I enjoy a greatly increased restfulness of sleep, and I am much more likely to remember dreams on waking up. Because memory and mental clarity is largely formed during deep sleep cycles, stringing together night after night of clear sleeping can strongly improve your focus.

Let’s summarize: when you eat raw foods, you take a huge load off of your system. This energy you once used for processing toxins or acting out the anxieties and urges of animal proteins can now be reclaimed and used for higher levels of productivity.

Who would have expected such flavor bombs, total treats to the senses, from dishes prepared exclusively from uncooked foods including bland yellow squash or flax seed? And who knew that raw foods can include breads, crackers, cakes and cookies made using a dehydrator? Even chocolates and ice cream.

Prepare to have many of your preconceptions blown to smithereens, as mine were during a recent visit to the kitchen and teaching studio of Joan Jackson, AKA “the Raw Kitchen Magician,” as she explains basic principles of raw food preparation to three students who had traveled from as far away as Anchorage, Alaska, for her monthly weeklong, intensive session.

Don’t call her a chef, or even a cook, she insists. Instead, Jackson sees herself as a raw food instructor who can help people, especially those with health issues, get over the fear factor and adopt a raw food diet or simply incorporate more raw food into their diets. While a raw food advocate, she’s no purist, explaining that people can gain the full benefits of a raw diet by replacing 60 to 80 percent of the typical American overly processed, meat-based diet with raw food.

What constitutes “raw” may surprise you, since foods can be heated to 118 degrees and dried in a dehydrator, warmed and still be considered raw, she explains. This opens the door to unexpected foods, including flavorful vegetable, nut, and seed-based crackers, tortillas, breads and cakes that easily replace traditional baked goods. These breads, with the addition of nut butters and fresh veggie toppings, quickly turn into nutritious snacks, wraps and canapés.

Based on her experience when she “went raw” in response to a health crisis while working 60-to-80-hour weeks, this kitchen wizard understands that meal preparation must be fast, easy and, yes, fun, so that anyone can produce nourishing, tasty, satisfying meals in under 10 minutes.

How is this possible? The key, she explains, is organization. It’s critical to set up your kitchen with the right tools and equipment and arrange your food purchasing and preparation systems to have key foundation foods at the ready to combine with fresh produce and other ingredients in minutes. Her book, “The Raw Kitchen Bible,” explains her system and shares her basic “formulas” — never “recipes,” a term she feels discourages creativity and experimentation.

Every one to three months, she prepares her foundation foods, including breads, drying them in her dehydrator for about 36 hours, never exceeding the approximate 118 degree temperature threshold when “raw” becomes “cooked,” killing the enzymes that are key to the raw diet.

If you’ve been contemplating adding more raw food into your diet, going beyond the usual salads and fresh fruit and veggie snacks, but don’t know where to start to create appetizing meals, check out Jackson’s basic Saturday raw food class. She also takes her message of the raw food diet’s health benefits to large groups, especially within African-American and minority communities.

Setting up a raw food kitchen is not inexpensive. Purchasing essentials for a basic kitchen can run $2,000 to $3,000, including a high-powered blender, two dehydrators, a juicer, one or two heavy-duty food processors and 200 containers. Another $800-$1,000 purchases basic food supplies, including nut butters, extracts, nuts, seeds and oils. For a more elaborate kitchen like Jackson’s, costs run $4,000 to $6,000. But missing from her kitchen are a cooktop, oven, toaster and microwave.

“But the truth is that you can start this raw food life with just a good knife and cutting board,” she says.

The native San Diegan never envisioned herself as a raw food guru. In 2005, an overworked civil rights attorney weighing 320 pounds and pre-diabetic, Jackson had an epiphany when she found she couldn’t move quickly enough to rescue her young son when he slipped on a Fashion Valley escalator. He wasn’t injured, but Jackson, who was suffering from a growing array of chronic ailments, realized she had to “change or die.”

She switched to an organic, vegan and raw diet. Within three days she had more energy, and within a month her symptoms disappeared. To celebrate her improving health, she enrolled in the three-week body-mind-spirit program, including a raw diet, at the Optimum Health Institute (OHI) in Lemon Grove. Within 18 months she had lost 150 pounds.

After her first OHI stay, Jackson began experimenting with raw food and set up her pantries, equipping her kitchen over a four-month period. Then calls started coming, from people completing OHI programs who had no grasp of how to translate a raw food diet into daily living.

“‘Can I come see your kitchen, may I bring my friend?’ I decided to open up my kitchen and teach a class on Saturdays. People were afraid to go home, not knowing how to feed themselves. I wanted to demystify raw food for people and show them a real raw food working kitchen,” Jackson explained.

Her teaching, which gives her joy, gradually supplanted her law practice, which she closed in 2012 in favor of full-time teaching, consulting and coaching.

Changing her diet also transformed her life, from a once-angry lawyer into a joy-filled teacher who’s found her passion.

Squash “Pasta” Primavera

This is a “formula” — adjust proportions to taste.

Makes 1-2 servings

  • 1 summer squash, yellow or green (zucchini)
  • 1-3 tablespoons fresh basil, chopped
  • 3-4 dried raw black botija olives, chopped
  • 1-2 tablespoons sun-dried tomatoes packed in olive oil, chopped
  • Pinch of salt
  • Marinara sauce to taste, optional (recipe follows)
  • 1-2 tablespoons raw “Parmesan” cheese (recipe follows)

Make squash noodles/spaghetti using a spiralizer or chop thin strips with a knife. Toss with basil, olives, sun-dried tomatoes and salt. Top with optional marinara sauce. Sprinkle with “Parmesan” cheese and serve.

Homemade “Parmesan” Cheese

Rejuvelac is sold in health food stores or is easy to make from online recipes.

  • 2 cups pine nuts and/or macadamia nuts
  • 1½ cups rejuvelac
  • 2 tablespoons nutritional yeast
  • Salt to taste

Soak nuts overnight in rejuvelac. Drain nuts, measuring remaining liquid and topping off to reach required amount of rejuvelac. Place all ingredients in blender, blending until smooth. Spread mixture about 1/8 inch thick on Teflex sheets and place in dehydrator for 12-18 hours at 105 degrees. Flip “cheese” sheets and return to dehydrator to dry another 12-18 hours until thoroughly dry to touch. Allow to cool, crumble and refrigerate in sealed containers to maintain freshness.

Marinara Sauce

For seasonings, start with small quantities (1-2 teaspoons fresh herbs, 1-2 cloves garlic, pinch of salt) and add more to taste. Leftover marinara sauce can be blended with a banana and dehydrated to use like a tortilla for wraps.

  • 6 Roma tomatoes
  • 6 ounces olive oil
  • 4 sun-dried tomatoes
  • Agave nectar, to taste
  • Basil and other fresh Italian herbs, to taste
  • Garlic, to taste
  • Salt, to taste

Place all ingredients in a blender and process until creamy. Adjust seasonings to taste.

Beauty Granola

Vary ingredients and quantities to taste.

Makes 1-2 servings

  • 1 cup mixed macadamia and Brazil nuts, irregularly and coarsely chopped in blender
  • ½ cup sesame seeds
  • ½ cup flax seeds
  • ¼ cup dried blueberries
  • ¼ cup sun-dried shredded coconut, unsweetened
  • Pinch chipotle chili powder
  • Pinch salt
  • 1/8 teaspoon ground vanilla bean
  • 3-4 Medjool dates

Mix all ingredients except dates in bowl. Add dates, shredding into small bits while mixing together with hands. Serve in bowl or glass with almond milk.

Almond Milk

Reusable food-grade nut milk bags are widely sold online.

  • 1 cup almonds
  • 3 cups water (for standard almond milk or 2 cups for cream equivalent or 4 cups for nonfat milk)

Blend in heavy-duty blender. Pour into a food-grade nut milk bag to strain over a bowl. Squeeze out milk and use residue as almond paste. Refrigerate up to four days.


The choice of nut butter determines whether the chocolate is light or dark. Cashew butter produces a milk chocolate flavor, while almond butter yields a darker chocolate.

Makes about 12-15 chocolates

  • ½ cup cacao butter
  • Pinch salt
  • Pinch cayenne
  • Flavorings to taste: vanilla, almond or mint essence or coffee extract; curry or chili powder
  • ¼ cup agave syrup (or other sweetener)
  • ½ to 1 cup cacao powder
  • 2 tablespoons almond or cashew butter
  • Optional extras, such as shredded fresh coconut, chopped nuts or cacao bits

Melt cacao butter in a dehydrator or by suspending bowl in hot water. When cacao butter is warm, mix in salt, cayenne and extracts or essences. Working quickly, stir in agave syrup, followed by half cup cacao powder, mixing in powder well. Taste before adding more cacao powder to increase richness. Mix in nut butter and any additional spices, flavorings or extras. Form chocolate into desired shape or place in individual paper cups before chilling and serving.

I was reading the other day again from Dr. Robert Morse’s book the chapter about raw food diet for cancer patients. And I was once again amazed by the breakthrough information presented in a very condensed form, but still very easy and interesting to read.

What I want to stress in this short article is an idea which I think is important in the light of so much information about raw food and cancer patients that is now available on the internet.

And that idea is that the raw food diet for cancer patients is different from the raw food diet for other health conditions.

Now, I don’t want to say that there aren’t certain raw foods which are stronger in their effect on cancer than others.

But, the point I am trying to clarify is that a raw diet will help heal any type of illness, including cancer.

So, if you make the transition to the raw lifestyle you will also be on your way of regaining your health if you have been diagnosed with cancer.

A real story comes to my mind right now.

A man was diagnosed with cancer. And after following the traditional procedures and treatment the doctor prescribed him, he was told that the cancer progressed and he had only a few short months to live.

So, it was better for him to go home, because there was nothing else medicine could do to him.

As he walked out of the hospital, sad and discouraged, he went through a market.

And there he saw some red grapes. He bought a few pounds and started eating them.

He continued to do this, transforming it in a habit, since he couldn’t eat much else of cooked food.

Waiting to die and death not coming, he went back to the hospitals for analyses. After the results came, he was surprised to find out that his cancer was on remission.

You can imagine his joy at this amazing news.

We can rightly say that this man stumbled on the raw food diet for cancer patients.

And that is my point. Don’t wait to find a raw diet which is specifically designed for cancer patients.

Start with the best raw food program available to you. Or, start eating raw right away. The benefits will not delay to show in your life.

And then you can get the extra edge with a few more veggies and fruits which you can include in your diet.

Also, juicing is a must for a cancer patient.
